Pulled Slow Cooker Chicken Wraps




This is another simple recipe to  make for these cold days that are FINALLY dawning upon us, I made this last night and it was absolutely divine so I just had to share.
Ingredients

Chicken breasts (I used 1 per person)
Olive oil
½ cup mayonnaise (we use egg and dairy free)
½ cup peach chutney
3 tbsp of brown sugar
Mixed herbs
Cole slaw Mix
Wraps or Roti’s

Method
Pop your defrosted chicken in the slow cooker

Throw in your sauces, spice and a drizzle of olive oil

Sprinkle the sugar over and mix it all up

Leave to cook for 4-6 hours

Take two forks and pull the chicken apart

Toss the Cole slaw mix which is essentially cabbage and carrots in with the chicken and mix well until all is coated

Heat the wraps or roti’s in the pan/oven or microwave, I prefer roti’s they are not only cheaper but not as thick and dough like as a wrap.

Lay some filling along the centre of each wrap and serve

I found this to be so quick and easy, the Cole slaw mix gave a nice crunch and the sauce was tangy and sweet, yum.
