It is Monday once again and it is time to share another scrumptious veggie meal.
This week I made a chick pea curry and it went down well with everyone even Gabriel who is as fussy as it comes when veggies are involved.
The nice thing about this meal is you can pretty much use what ever veggies you have on hand, it can be as cheap and easy as you want/ need it to be, I used the following:
Several Carrots
1 Large Zuccini
Half a large onion
1 can of chickpeas
1/2 cup of split peas and lentils
5 large potatos cut into 4
half a packet baby tomatos
1 table spoon raja curry powder
1/2 tsp masala
Dice or slice and throw it all together in the slow cooker with enough water to cover the ingrediants.
Leave to cook on low for 6 hours or even 8, I switch the slow cooker on in the morning and when I get home all us done, if you do not have a slow cooker you can make it on the stove top as well with a bit of oild added to the water, I just find the slow cooker adds flavour and the veggies all cook so lovely and soft.
